From ancient times to the Renaissance days, the back alleys of the old Italian cities lured passengers with the most diverse smells, with the recipes traveling in all directions on today's modern highways.
The old grannies would use thousands of ingredients from the colorful landscape of the Apennine peninsula, where besides the usual pasta and pizza, countless dishes make Italian cuisine so rich and diverse.
Insolita is an homage to this lucidity and ingenuity of Italian cuisine. Both traditional and always ready for the new, unusual and off-the-beaten-path, perfect for the hectic city life with ancient roots when you dig into grandma's recipe book.
Insolita takes cues and inspiration from Calabria to Friuli, from Tuscany to Sicily, from the menu in the back streets of Palermo or Naples to countless variations of the same dishes on the way to Turin or Udine.
Its constantly evolving menu takes some of the most iconic dishes apart and reassembles them by living up to Insolita's name, always looking for the perfect relationship of fullness, texture and color, balancing quality and wellbeing with inspiration and full gastronomic experience.
