Since March 2024, Gastrošor has enriched its offerings with a new concept called "In Smoke We Trust," introducing the allure of authentic Texas-style barbecue to the local culinary scene. What characterizes this concept is the slow smoking process used to prepare premium cuts of meat, lasting up to a staggering 15 hours! With each passing hour, the meat absorbs whispers of beechwood, transforming into a tender masterpiece bursting with flavor. Smoking meat in an offset smoker is not just a food preparation process; it's a ritual that spans from the morning silence to dusk, where each hour brings a new layer of taste and texture to perfectly cooked meat.
One of the key elements of the "In Smoke We Trust" concept is their pitmasters, experts in meat preparation tasked with creating perfection in every bite. Marko Karas and Marin Rudić are not just pitmasters and enthusiasts of original Texas-style barbecue; they are also gracious hosts who aim to guide their guests through all the intricacies of this unique culinary approach.
The "In Smoke We Trust" menu revolves around dishes made from beef (brisket), pork, and turkey, accompanied by homemade BBQ and burger sauces, Coleslaw salad, and other sides, as well as fresh homemade bread. Although the focus may seem to be on food, the "In Smoke We Trust" team has ensured a truly rich selection of beverages, including a wide range of craft beers and gins, wines from local vineyards, and everything else necessary for a complete culinary experience.
