Ours, and national - Kolubara brings modern national cuisine to Gastrošor!

The new resident of the tastiest street in the city is called Kolubara, and it is a new restaurant from the "kitchen" of an already well-known team on the local gourmet scene.

We knew from the start that we wanted a restaurant of national cuisine in our street. But we also said that we don't want it to be just any kind of restaurant, nor an attempt to make the national cuisine into something that it is not, something only appealing to cosmopolitans, among whom we are included. And that's exactly why we value authenticity, whether it's a cafe in Lisbon or Belgrade.

 Kolubara tends to modernize traditional Serbian dishes with even older, local ingredients, as opposed to the many international ones that have crept into the standard of the bar today, paradoxically making it less authentic. So, in this restaurant you can try nettle pesto and pumpkin butter, as the grandmothers used to make, but also the charming Šumadija response to Italian caprese. Plus, as a further step higher from the pub standard, there are incomparably more creative desserts like warm apple pie or homemade cheesecake with blueberry sauce.

Of course, the backbone of the menu and the absolute trump cards are the dishes under the sach, slow-cooked pork tenderloin, oven-baked dishes or the super-heavyweight category of grinders with cracklings and bacon chips. But have you tried the gourmet grill on a layered burek dough? To make the whole thing more beautiful, Kolubara skillfully accompanies all the strength of dishes from the local kitchen with a selection of local wines, some of which rightly have the highest world ratings.

In Gastrošor, we already have quite a bit of trouble to choose the best garden, because Kolubara also completed the high task set by Docker and Insolita, to provide its guests with an ambient journey in addition to a gourmet one, there is also a restored carriage that will be the first for some new kids to see in person.

From Kolubara, they announce great tambourine evenings, and no less authentic home atmosphere, without wanting to be something that it is not, but on the contrary, to wish our future guests from all over the world a traditional welcome right at the beginning of the show.
